Preparation

  • Gather and wash all your ingredients. Chop the cherry tomatoes in half and mince the garlic.
  • Cut chicken into strips if using; zest the lemon and wash the spinach.

Cooking

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 30 seconds.
  • Add chicken, season with salt, black pepper, and dried basil. Cook until golden brown, about 6-7 minutes.
  • Add halved cherry tomatoes and stir for another 3 minutes until softened.
  • Add fresh spinach and cook for 2-3 minutes until wilted.
  • Remove from heat, zest the lemon over the skillet, and squeeze in the juice.
  • Crumble feta cheese on top before serving.
