Ingredients
  

Main Ingredients

  • 1 can chickpeas drained and rinsed
  • ½ cup breadcrumbs regular or gluten-free
  • ¼ cup nutritional yeast adds a cheesy flavor
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika for smokiness
  • salt and pepper to taste
  • 2 tbsp fresh parsley chopped, optional

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Drain and rinse the chickpeas, then pat them dry.
  • In a food processor, combine chickpeas, breadcrumbs, nutritional yeast, olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  • Pulse for 15–20 seconds until the mixture is combined but still slightly chunky.
  • Add chopped parsley if desired and stir to mix evenly.
  • Form the mixture into small nugget shapes and place on the baking sheet.
  • Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  • Let cool for a few minutes before serving with your favorite dipping sauce.

Notes

For a gluten-free version, use gluten-free breadcrumbs. You can also substitute olive oil with aquafaba or vegetable stock for a lighter texture. Serve with vegan ranch, ketchup, or spicy mustard for dipping.
