  • 1 pound ground chicken
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth Use gluten-free if necessary.
  • 1 can diced tomatoes (14.5 oz) Drain if necessary.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Gather all your ingredients. Chop the onion, dice the carrots and celery, and mince the garlic.
  • In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
  • Once the onion is softened, stir in the minced garlic, cooking for another minute.
  • Add the ground chicken to the pot and cook until it is browned.
  • Toss in the diced carrots and celery and cook for about 5 minutes until the vegetables start to soften.

Cooking

  • Pour the chicken broth into the pot, followed by the diced tomatoes, and stir well.
  • Add in the dried oregano, dried basil, salt, and pepper. Stir to combine.
  • Bring the pot to a simmer and let it cook for about 20-30 minutes.
  • After simmering, taste the soup and adjust the seasoning if necessary.

Serving

  • Ladle the soup into bowls and garnish with chopped parsley before serving.

Notes

Store in an airtight container for up to three days. Reheat on the stove or freeze for up to three months.
