  • 4 pieces tortillas
  • 16 oz rotisserie chicken (chopped or shredded)
  • 2 TB fresh basil (chopped or chiffonade)
  • 1 cup part-skim mozzarella cheese
  • ½ jar pizza sauce (about 135 grams)

Preparation

  • Gather all your ingredients and tools. You will need a skillet, cooking spray or olive oil, a spatula, and a cutting board.
  • Heat your skillet over medium-low heat and spray it with cooking spray or brush with olive oil.
  • In a bowl, mix the chopped rotisserie chicken with fresh basil and seasonings if desired.

Cooking

  • Add the first tortilla to the skillet and let it warm for about 30 seconds.
  • On one half of the tortilla, layer the chicken and basil mixture, followed by mozzarella cheese.
  • Drizzle pizza sauce over the cheese and filling.
  • Cook for a few minutes, checking for browning and melting cheese.
  • Fold the tortilla over to form a half-moon shape once browned.
  • Cook for an additional minute, then flip and cook until crispy and cheese is fully melted.
  • Remove from skillet, cut into halves or quarters, and serve warm.

Notes

Serve with marinara, ranch, or salsa, and fresh salad. Store leftovers in airtight container for up to 3 days or freeze for 2-3 months.
