Ingredients
  

Meat & aromatics

  • 1 lb Italian sausage (mild or spicy) casings removed if in links
  • 1 medium onion diced
  • 2 carrots carrots peeled and chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced

Beans & broth

  • 2 cans white beans (e.g. cannellini or navy), drained & rinsed
  • 6 cups chicken broth
  • 1 cup diced tomatoes (optional) or fire-roasted tomatoes

Vegetables & finishers

  • 2 cups leafy greens (kale, spinach, or similar) stemmed and roughly chopped
  • ½ cup heavy cream or half-and-half (optional) for creaminess
  • Salt & black pepper (to taste)
  • 1 Tbsp Italian seasoning (or mix of basil, oregano, thyme)
  • 1 Tbsp Parmesan rind (optional) for extra flavor

Instructions
 

  • Heat a large pot or Dutch oven over medium heat. Add the Italian sausage, breaking it up as it cooks until browned and cooked through. Remove and set aside (reserve some fat in pot).
  • In the same pot, add onion, carrots, and celery. Sauté until softened, about 4-6 minutes.
  • Add garlic and Italian seasoning. Cook 1 minute, stirring, until fragrant.
  • Stir in the white beans, chicken broth, and diced tomatoes (if using). Add the Parmesan rind if using at this stage.
  • Bring the soup to a boil, then reduce heat and simmer for about 15 minutes to let the flavors meld.
  • Return the browned sausage to the pot. Add the chopped leafy greens. Simmer until greens are wilted and everything is heated through, 5–10 minutes.
  • If using cream, stir in gently now to add richness. Adjust salt and pepper as needed.
  • Serve hot, optionally garnished with grated Parmesan, fresh herbs, or crusty bread.

Notes

You can adjust the thickness by reducing or adding more broth. The Parmesan rind (if used) can be removed before serving. Leftovers store well in the fridge for several days; the beans may thicken the soup over time, so you might want to thin with extra broth when reheating.
