Preparation

  • Start by gathering all your ingredients. Slice the chicken breast, jalapeños, bell pepper, and onion. Mince the garlic and ginger as well.

Cooking

  • Heat the olive oil in a large pan over medium heat. Once hot, add the minced garlic and ginger. Sauté for about one minute until fragrant.
  • Add the sliced chicken breast. Stir occasionally and cook until it changes color and is cooked through, approximately 5 to 7 minutes.
  • Introduce the sliced jalapeños, bell pepper, and onion. Stir well and cook for 3 to 5 minutes until the vegetables are slightly softened.
  • Drizzle the soy sauce over the stir-fry, stirring continuously to coat the ingredients evenly.
  • Season with salt and pepper according to your preference. Adjust any seasonings needed.
  • Allow the mixture to cook for an additional 2 to 3 minutes until everything is well combined.
  • Remove the pan from heat and serve hot, either on its own or over rice or noodles.

Notes

To store, let cool and keep in an airtight container for up to 4 days. Reheat in the microwave or skillet. Can be frozen for up to 3 months.
