Ingredients
  

Dough

  • 2 cups all-purpose flour
  • ½ cup cold butter diced
  • ¼ cup cold water
  • 1 tsp salt

Vegetable Filling

  • 1 cup mixed vegetables carrots, peas, corn
  • ½ onion finely chopped
  • 1 clove garlic minced
  • 1 tsp thyme
  • 1 tsp paprika
  • ½ tsp black pepper

Instructions
 

  • Gather and prepare all ingredients. Chop onions, mince garlic, and measure out flour, butter, and spices.
  • In a large bowl, mix flour and salt. Add diced cold butter and blend with your hands or a pastry cutter until it resembles coarse crumbs.
  • Gradually pour in cold water and stir just until dough forms. Shape into a ball, wrap in plastic, and refrigerate for 30 minutes.
  • In a skillet over medium heat, sauté onion and garlic until fragrant. Add mixed vegetables, thyme, paprika, and pepper. Cook 5 minutes until vegetables are soft and well seasoned. Remove from heat and cool.
  • Roll chilled dough to 1/8-inch thickness. Cut into circles using a cutter or bowl.
  • Spoon filling onto one half of each circle, fold over, and crimp edges with a fork to seal.
  • Place patties on a parchment-lined baking sheet and bake at 375°F (190°C) for 25 minutes or until golden brown.
  • Cool slightly before serving. Enjoy warm with your favorite dipping sauce.

Notes

For a vegan option, replace butter with coconut oil or vegan margarine. To add a kick, include chopped jalapeños or curry powder in the filling. These patties freeze well—store them individually wrapped and reheat in the oven when ready to serve.
