  • 2 pieces chicken breasts
  • 1 piece ripe California avocado Ensure it's ripe for the best texture and flavor.
  • 1 cup cherry tomatoes, halved
  • 1 piece lime, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced Can skip for garlic sensitivity.
  • 1 teaspoon chili powder Can substitute with cumin or smoked paprika.
  • to taste Salt and pepper
  • Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Gather all your ingredients: chicken breasts, olive oil, lime juice, garlic, spices, avocado, and cherry tomatoes.
  • Wash the chicken breasts and pat them dry with a paper towel. Halve the cherry tomatoes and have your avocado ready for slicing later.

Marination

  • In a medium bowl, mix lime juice, olive oil, minced garlic, chili powder, salt, and pepper until well combined.
  • Place the chicken breasts in the marinade, ensuring they are fully coated. Cover and let marinate in the fridge for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Grill the marinated chicken for about 6-7 minutes on each side, checking for an internal temperature of 165°F.

Serving

  • Once done, remove the chicken from the grill and let it rest for a few minutes before slicing.
  • Serve topped with sliced avocado and cherry tomatoes, garnished with fresh cilantro, if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. You can reheat in the oven at 350°F for about 10-15 minutes or in a skillet with a splash of water.
