  • 2 teaspoons ground cumin
  • 2 teaspoons ground paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon cayenne pepper Adjust to taste for spice level.
  • Salt and pepper to taste

Preparation

  • Start by gathering all your ingredients. Chop the garlic and measure out your spices to ensure everything is ready.
  • In a large bowl, mix olive oil, lemon juice, minced garlic, and spices (cumin, paprika, turmeric, coriander, cayenne, salt, and pepper).
  • Add the chicken thighs to the bowl, ensuring they are well coated. Cover and let marinate for at least one hour.
  • Preheat your grill or a skillet over medium-high heat.

Cooking

  • Once ready, place the marinated chicken on the grill or skillet. Cook for 5-7 minutes on each side, until it reaches an internal temperature of 165°F.
  • After cooking, allow the chicken to rest for a few minutes to redistribute the juices.
  • Slice the chicken into strips.
  • Prepare your serving base, such as warm pita bread, rice, or fresh salad.
  • Assemble your dish by placing sliced chicken on the serving base and adding toppings such as tomatoes, cucumbers, and tahini sauce.

Notes

For a vegetarian option, consider marinating tofu or portobello mushrooms. This dish pairs well with rice pilaf and roasted vegetables.
