  • 4 pieces pork chops
  • salt and black pepper to taste
  • 2 tbsp olive oil

Gravy

  • 1 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tbsp flour
  • 1 tbsp butter
  • fresh herbs optional, for garnish

Instructions
 

  • Season pork chops generously with salt and pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat until shimmering. Add pork chops and sear for 4–5 minutes on each side until golden and cooked through (internal temperature 145°F/63°C).
  • Remove pork chops from skillet and cover to keep warm.
  • In the same skillet, melt butter, then whisk in flour to form a roux. Cook for 1 minute until lightly golden.
  • Gradually whisk in chicken broth and cook until thickened, about 3–5 minutes. Stir in Dijon mustard.
  • Return pork chops to the skillet, spoon gravy over them, and let simmer for 1–2 minutes to absorb flavors.
  • Garnish with fresh herbs and serve warm with mashed potatoes, rice, or vegetables.

Notes

For a gluten-free option, use cornstarch instead of flour for the gravy. Add garlic powder, paprika, or cayenne for extra flavor. Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
