Preparation

  • Start by gathering all your ingredients. Measure out the sugar-free dark chocolate chips, heavy cream, cocoa powder, vanilla extract, and salt.
  • In a microwave-safe bowl, melt the chocolate chips in 30-second intervals. Stir after each interval until completely smooth.
  • Once the chocolate is melted, pour in the heavy cream. Stir continuously until the mixture is smooth and fully combined.
  • Mix in the vanilla extract and pinch of salt. Stir well to ensure every bit of chocolate is infused with flavor.
  • Refrigerate the chocolate mixture for about 30 minutes until firm.
  • Once chilled, scoop out small portions using a melon baller or small spoon. Roll each portion into a ball between your palms.
  • After shaping the truffles, roll each one in the unsweetened cocoa powder. Ensure they are evenly coated.
  • Place the finished truffles back in the refrigerator until firm.

Notes

Store in an airtight container in the refrigerator for up to one week. Can also be frozen for up to three months.
