Ingredients
  

Keto Reuben Roll-Ups

  • 8 slices Swiss cheese
  • 8 slices corned beef
  • ½ cup sauerkraut well drained
  • ¼ cup keto Thousand Island dressing
  • ½ tsp garlic powder
  • cooking spray or oil for greasing

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Lay Swiss cheese slices flat on the baking sheet, leaving space between each slice.
  • Bake cheese for 4–5 minutes until melted and edges begin to crisp.
  • Remove from oven and quickly top each slice with corned beef, sauerkraut, dressing, and garlic powder.
  • Carefully roll up each slice while warm.
  • Return roll-ups to the oven seam-side down and bake for another 4–6 minutes until crispy.
  • Serve warm with extra dressing for dipping.

Notes

For extra crispiness, pan-fry the roll-ups briefly in a nonstick skillet. Make sure sauerkraut is very well drained to avoid sogginess.
