  • 1 cup spinach Provides nutrients and reduces in volume when cooked.
  • 1 onion, chopped Adds sweetness and depth.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.

Spices and Seasoning

  • 1 tsp dried oregano For aromatic flavor.
  • 1 tsp paprika Adds a smoky flavor.
  • Salt and pepper to taste Important for balancing flavors.

For Cooking

  • Olive oil Used for sautéing.

Instructions
 

Preparation

  • Gather all your ingredients. Chop the onion, dice the zucchini, and mince the garlic.

Cooking the Base

  • Heat a splash of olive oil in a skillet over medium heat.
  • Once shimmering, toss in the chopped onions and minced garlic. Sauté until translucent, about 2–3 minutes.

Add the Ground Chicken

  • Add the ground chicken to the skillet. Break the meat apart as it cooks for 5–7 minutes until browned.

Incorporate Vegetables

  • Once the chicken is browned, add the chopped red bell pepper and diced zucchini. Stir well and cook for an additional 4–5 minutes until tender.

Mix in Spinach and Spices

  • Stir in the spinach along with the dried oregano and paprika. Cook until the spinach wilts, about 2–3 minutes.

Season and Serve

  • Season with salt and pepper to taste. Serve warm and enjoy!
  • Optional: Top with freshly grated cheese or herbs for added flavor.

Notes

Store leftovers in an airtight container in the refrigerator for 3–4 days. This dish freezes well for up to three months. To reheat, warm in a skillet over medium heat with a splash of water or broth.
