  • 4 oz smoked salmon
  • 2 cups mixed greens (such as spinach, arugula, or baby kale) Any leafy green will work.
  • ¼ cup cherry tomatoes, halved
  • ¼ cup cucumber, sliced Zucchini or bell peppers can be used as alternatives.
  • ¼ medium red onion, thinly sliced Green onion can be substituted.
  • 2 tablespoons capers Olives can be used as a substitute.
  • 2 tablespoons chives, chopped Fresh parsley or dill can be alternatives.
  • 2 tablespoons olive oil Feel free to experiment with flavored oils.
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

Preparation

  • Start by ensuring your kitchen is clean and organized. Gather your ingredients and utensils, including a large salad bowl and a whisk for the dressing.
  • Wash your mixed greens thoroughly under cold water. Spin them dry or pat them gently with a clean towel.
  • Slice your cucumber, red onion, and halved cherry tomatoes into bite-sized pieces.
  • In your large bowl, combine the mixed greens, sliced cucumber, cherry tomatoes, red onion, and capers. Mix well.
  • Carefully place the smoked salmon on top of your mixed greens.

Dressing and Serving

  • In a small bowl, combine olive oil, lemon juice, chopped chives, salt, and pepper. Whisk together thoroughly.
  • Drizzle the dressing over the salad.
  • Using salad tongs, gently toss the salad to coat all ingredients with the dressing.
  • Serve immediately, either on individual plates or in the bowl.
  • Optionally garnish with additional chives or a sprinkle of black pepper.
