Key Lime Bars Citrus Treat

Ingredients
  

Shortbread Crust

  • 227 g unsalted butter, softened
  • 100 g granulated sugar
  • 250 g all-purpose flour
  • 1.25 g (1/4 teaspoon) kosher salt

Lime Custard Filling

  • 5 large eggs, at room temperature
  • 300 g granulated sugar
  • 95 g all-purpose flour
  • 180 ml key lime juice
  • 2 tablespoons key lime zest

For Serving

  • Powdered sugar, for dusting

Preparation

  • Gather all your ingredients. Ensure that the butter is softened, and your eggs are at room temperature. Preheat your oven to 175°C.
  • Line a 23x33 cm baking pan with parchment paper and grease it thoroughly.

Make the Shortbread Crust

  • In a mixing bowl, cream the softened butter for about 2–3 minutes until light and fluffy.
  • Add the 100 g of granulated sugar and 250 g of flour to the bowl, mixing until well combined.
  • Press the dough evenly into the prepared baking pan using your fingers.

Chill and Bake the Crust

  • Chill the crust in the refrigerator for about 15 minutes.
  • Bake in the preheated oven for 15–20 minutes or until lightly golden and fragrant. Allow to cool completely.

Prepare the Filling

  • In a large bowl, whisk together the eggs, 300 g of granulated sugar, 95 g of flour, key lime juice, and lime zest until smooth.

Bake Again

  • Once the crust has cooled, pour the custard mixture over the crust evenly.
  • Return the pan to the oven and bake for 25–30 minutes until the filling is just set.

Cooling and Serving

  • Remove from the oven and let cool completely in the pan.
  • Refrigerate the bars until cold. Before serving, dust with powdered sugar, slice into 16 bars, and enjoy.

Notes

For best results, serve chilled. You can substitute regular limes if key limes are unavailable. Adjust sweetness by reducing sugar if preferred.
