Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsalted butter softened
  • ½ cup granulated sugar
  • ¼ cup key lime juice freshly squeezed
  • 1 tsp lime zest
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 egg yolk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream butter and sugar together until light and fluffy.
  • Beat in the egg yolk, vanilla extract, key lime juice, and lime zest until well combined.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Shape dough into small balls and place on the prepared baking sheet, leaving space between each cookie.
  • Bake for 10–12 minutes or until edges are lightly golden.
  • Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  • Enjoy as-is or serve with whipped cream or a light icing drizzle!

Notes

For extra flair, dip half of each cookie in melted white chocolate or sprinkle with coarse sea salt. Store in an airtight container for up to a week or freeze for up to 3 months.
