Ingredients
  

For the crust

  • 1 cup all-purpose flour Can be substituted with gluten-free flour.
  • ½ cup unsalted butter, softened For vegan, use plant-based butter.
  • ¼ cup powdered sugar
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

For the filling

  • ½ cup cream cheese, softened For vegan, use coconut cream.
  • ¼ cup granulated sugar Can be swapped with agave or maple syrup.
  • ¼ cup lime juice
  • 1 tablespoon lime zest

For the topping

  • 2 ripe kiwis peeled and sliced Ensure kiwis are ripe for best taste.

Preparation

  • Gather all your ingredients. Measure out the flour, butter, powdered sugar, salt, and vanilla extract first.
  • In a bowl, mix the flour, softened butter, powdered sugar, and salt until crumbly, resembling wet sand.
  • Press the crumbly mixture into tartlet pans covering the surface and edges well.
  • Preheat your oven to 350°F (175°C) and bake the crusts for about 15 minutes until lightly golden. Let them cool.
  • While the crust cools, beat the softened cream cheese in a separate bowl. Add granulated sugar, lime juice, and lime zest, mixing until smooth.
  • Once the tart shells are cool, fill them with the cream cheese mixture and smooth the top with a spatula.
  • Top each tart with fresh kiwi slices arranged beautifully.
  • Chill the tarts in the refrigerator for at least one hour before serving.

Notes

Store in the refrigerator covered with plastic wrap or in an airtight container for up to three days. For better flavor, let the tarts sit at room temperature before serving.
