For the dip

  • 1 package Knorr Vegetable Soup Mix
  • 1 cup sour cream Can substitute with Greek yogurt for a healthier option.
  • 1 cup mayonnaise Can substitute with vegan mayonnaise for dairy-free version.
  • 1 cup chopped spinach (thawed and drained)
  • ½ cup water chestnuts (chopped) Can substitute with diced celery or chopped bell peppers.
  • ½ cup green onions (chopped)
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients. Ensure the spinach is thawed and well-drained, and chop the water chestnuts and green onions finely.
  • In a mixing bowl, combine the sour cream, mayonnaise, and Knorr Vegetable Soup Mix. Stir until well integrated and smooth.
  • Fold the chopped spinach into the creamy mixture gently.
  • Add the chopped water chestnuts and mix well.
  • Stir in the chopped green onions.
  • Sprinkle in garlic powder, salt, and pepper, and adjust seasoning to taste.
  • Mix until everything is fully blended to a creamy consistency.
  • Cover the bowl with plastic wrap and refrigerate for at least one hour.
  • Once chilled, give the dip a quick stir before serving.

Serving

  • Pair the dip with tortilla chips, pita chips, or fresh veggies such as carrots and cucumbers.

Notes

Store in an airtight container in the fridge for up to 3-4 days. Can be frozen, but may change texture upon thawing.
