  • 2 cups cooked chicken, shredded Use leftover chicken for convenience.
  • 1 cup rice, uncooked White or brown rice can be used.
  • 1 can cream of chicken soup Can substitute with a homemade or dairy-free version.
  • 2 cups chicken broth Can use low-sodium broth.
  • 1 cup milk Substitute with almond or coconut milk for dairy-free options.
  • 1 cup broccoli florets (optional) For added nutrition and flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional) Cheddar or your favorite cheese.

Preparation

  • Preheat your oven to 375°F (190°C). Gather all of your ingredients.
  • In a large mixing bowl, combine the cream of chicken soup, chicken broth, milk, garlic powder, onion powder, salt, and pepper. Stir until well-blended.
  • Stir in the uncooked rice and broccoli florets if using. Ensure the rice is fully incorporated.
  • Fold in the shredded chicken gently until evenly distributed.
  • Pour the mixture into a greased casserole dish and spread it evenly.
  • Cover the dish tightly with aluminum foil.
  • Bake for 45 minutes, allowing the rice to cook and absorb flavors.
  • For the last 10 minutes of baking, remove the foil and sprinkle cheese on top if using.
  • Check for doneness, then let sit for a few minutes before serving.
  • Scoop out servings and enjoy hot.

Notes

Store leftovers in an airtight container and refrigerate for up to 3-4 days. Can be reheated in the microwave or oven.
