Ingredients
  

  • 1 lb lean ground beef 96/4
  • 1 small white onion chopped (~100g)
  • 1 tbsp garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp Italian seasoning
  • ½ tsp dried basil
  • 4 cups tomato basil pasta sauce 32 oz (like Rao’s)
  • ½ cup beef broth low sodium
  • 8 oz rigatoni noodles uncooked
  • 4 oz low-moisture part-skim mozzarella cheese shredded
  • 4 oz part-skim ricotta cheese
  • fresh chopped basil for garnish
  • Parmesan cheese for topping

Instructions
 

  • Bring a large pot of salted water to a boil and cook rigatoni according to package directions until al dente. Drain and set aside.
  • In a large skillet, cook ground beef over medium heat until browned, about 5–7 minutes.
  • Add onion, garlic, salt, pepper, Italian seasoning, and dried basil. Cook for another 3–5 minutes until fragrant and onions are tender.
  • Stir in pasta sauce and beef broth. Let simmer while pasta cooks.
  • Add drained rigatoni to the skillet with sauce. Stir to coat and simmer for 2–3 minutes to combine flavors.
  • Stir in mozzarella until melted and gooey.
  • Dollop ricotta cheese over pasta. Mix lightly or leave in small pockets for creamy bursts.
  • Garnish with fresh basil and Parmesan cheese. Serve hot.

Notes

Customize your Lazy Lasagna by swapping ground beef for turkey, sausage, or a vegetarian substitute like mushrooms. Add spinach, zucchini, or bell peppers for extra flavor and nutrition.
