Preparation

  • Gather all your ingredients, measuring out the cottage cheese, blueberries, almond flour, and the rest of the items.
  • In a mixing bowl, combine the cottage cheese, fresh blueberries, lemon zest, honey (or maple syrup), almond flour, vanilla extract, and a pinch of salt.
  • Gently fold the ingredients together to ensure the blueberries stay whole.
  • Use your hands or a scoop to portion out the mixture, aiming for about one tablespoon for each bite.
  • Roll the scooped portions between your palms to form smooth spheres.
  • Preheat the oven to 350°F (175°C) if you prefer a toasted exterior.
  • Place the rolled bites on a baking sheet lined with parchment paper and bake for about 10-12 minutes or until golden brown.
  • Once done, cool them on a wire rack for a few minutes.
  • Drizzle with honey or maple syrup after baking and garnish with fresh blueberries before serving.

Notes

These bites can be stored in an airtight container in the fridge for up to a week. They can also be frozen for up to three months.
