Chia Pudding

  • 1 cup milk dairy or plant-based
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ tsp vanilla extract

Instructions
 

  • In a mixing bowl, whisk together milk, honey, lemon juice, lemon zest, and vanilla extract until well combined.
  • Add the chia seeds and stir thoroughly to distribute them evenly.
  • Let the mixture sit for 5 minutes, then stir again to prevent clumping.
  • Cover and refrigerate for at least 2 hours or overnight until thick and pudding-like.

Notes

Adjust sweetness to taste by adding more honey or maple syrup. This pudding can be stored in the refrigerator for up to 3 days.
