Preparation

  • Gather all your ingredients, including chicken breasts, Romano cheese, breadcrumbs, eggs, lemon juice, olive oil, salt, and pepper.
  • Preheat the oven to 375°F (190°C).
  • In a shallow bowl, beat the eggs and whisk in the lemon juice.
  • In a separate bowl, combine breadcrumbs and grated Romano cheese until thoroughly mixed.

Cooking

  • Dip each chicken breast into the egg mixture, letting excess drip off, then coating it in the breadcrumb and cheese mixture.
  • Heat olive oil in a large skillet over medium heat until hot.
  • Carefully place coated chicken breasts in the skillet and sear for 3-4 minutes on each side until golden brown.
  • Transfer the seared chicken to a baking dish in a single layer.
