Chicken and Marinade

  • 2 pieces chicken breasts Lean protein source

Salad Base

  • 2 cups mixed greens Use fresh and washed
  • 1 cup cherry tomatoes, halved Adds color and sweetness
  • 1 piece cucumber, sliced Great for crunch

Instructions
 

Preparation

  • Gather all ingredients and wash the mixed greens, halved cherry tomatoes, and sliced cucumber.
  • Preheat the grill to medium-high heat.

Marinade and Grilling

  • Combine olive oil, juiced lemon, dried dill, salt, and pepper in a bowl. Stir to mix well.
  • Place chicken breasts in a shallow dish or resealable bag and pour marinade over them. Marinate for at least 30 minutes.
  • Grill the marinated chicken for 6-7 minutes on each side, until fully cooked with juices running clear.
  • Remove from grill and let the chicken rest for 5 minutes before slicing.

Assembly

  • In a bowl, create a bed of mixed greens, followed by the halved cherry tomatoes and sliced cucumber.
  • Top the salad with sliced chicken, and drizzle any remaining marinade on top.
  • Serve immediately for best flavor, either warm or cold.
