Preparation

  • Gather all your ingredients. Wash the broccoli florets and cherry tomatoes thoroughly. Dice the chicken breast into bite-sized pieces. Mince the garlic and set aside the lemon for juicing and zesting.

Cooking

  • In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced chicken. Season with salt and pepper. Cook the chicken until it is browned and cooked through, approximately 5-7 minutes.
  • Once the chicken is cooked, stir in the minced garlic and cook for another minute. Add the juice and zest of the lemon, stirring well to coat the chicken.
  • Next, add the broccoli florets and cherry tomatoes to the skillet. Cook the vegetables for about 3-4 minutes until they are tender but still slightly crisp.

Serving

  • Assemble your bowls starting with a generous portion of cooked rice at the bottom of each bowl.
  • Spoon the chicken and vegetable mixture over the rice, ensuring an even distribution.
  • Garnish with chopped fresh parsley and serve immediately while hot.
