Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2 lemons juiced and zested
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • salt and pepper to taste
  • 2 cups rice
  • 4 cups water or additional chicken broth for cooking rice
  • fresh parsley for garnish

Instructions
 

  • Season the chicken breasts with salt and pepper.
  • In a bowl, whisk together lemon juice, zest, oregano, thyme, garlic, and chicken broth.
  • Place chicken in slow cooker and pour the lemon herb mixture over it.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.
  • About 30 minutes before serving, cook the rice with water or broth until fluffy.
  • Check that the chicken reaches an internal temperature of 165°F (75°C).
  • Serve chicken over rice, drizzle with cooking juices, and garnish with fresh parsley.

Notes

You can substitute chicken thighs for a richer flavor, or swap rice for quinoa or cauliflower rice for a lighter option. Fresh herbs may be used instead of dried for extra vibrancy.
