Ingredients
  

For the Crust

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup powdered sugar
  • ¼ teaspoon salt

For the Filling

  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup fresh lemon juice
  • 2 teaspoons lemon zest
  • ¼ teaspoon baking powder

For the Meringue

  • 3 large egg whites
  • ½ teaspoon cream of tartar
  • ¼ cup granulated sugar for meringue

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and line an 8x8-inch baking pan with parchment paper.
  • In a medium bowl, mix the flour, softened butter, powdered sugar, and salt until crumbly.
  • Press this mixture firmly into the bottom of the prepared pan.
  • Bake for 15 minutes until lightly golden and set.

Filling

  • In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  • Pour the lemon mixture over the baked crust and bake for another 20 minutes or until filling is set.

Meringue

  • In a mixing bowl, beat egg whites and cream of tartar until soft peaks form.
  • Gradually add in sugar and continue beating until stiff peaks form.
  • Spread the meringue over the lemon filling, sealing the edges.
  • Bake for an additional 10-15 minutes until meringue is golden brown.

Cooling and Serving

  • Once baked, allow to cool completely in the pan before slicing.

Notes

Store in the refrigerator for 3-4 days. Can be frozen for up to two months.
