Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened Ensure at room temperature
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • ½ teaspoon salt

For the filling

  • 1 cup mulberries, fresh or frozen If using frozen, no need to thaw
  • ½ cup cream cheese, softened Ensure at room temperature
  • ½ cup powdered sugar
  • ¼ cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

For the topping

  • ¼ cup rolled oats

Preparation

  • Gather all your ingredients. Preheat the oven to 350°F (175°C) and grease your baking dish.

Make the Crust

  • In a mixing bowl, combine flour, butter, granulated sugar, brown sugar, and salt. Mix until crumbly.
  • Press half of the mixture into the bottom of the greased baking dish.

Prepare the Cream Cheese Layer

  • In a separate bowl, mix cream cheese with powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  • Spread the cream cheese mixture over the crust.

Add Mulberries

  • Scatter mulberries evenly over the cream cheese layer.

Top with Crumble

  • Sprinkle the remaining crumb mixture over the mulberries followed by the rolled oats.

Bake

  • Bake for 25-30 minutes until the top is golden brown and edges are bubbling.

Cool and Chill

  • Allow to cool completely at room temperature before slicing.
  • Chill in the refrigerator for at least an hour before serving.

Serve

  • Slice into squares and serve with whipped cream or ice cream if desired.

Notes

For better results, ensure butter and cream cheese are at room temperature. For more lemon flavor, double the lemon zest.
