Ingredients
  

  • ¾ cup granulated sugar
  • lemon zest zest of 1 lemon (mixed into sugar)
  • cup unsalted butter room temperature
  • 1 large egg egg
  • ½ teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 8 oz cream cheese softened, for filling
  • 4 tablespoons unsalted butter softened, for filling
  • cups powdered sugar
  • lemon juice to taste in filling
  • lemon zest a bit for filling flavor

Instructions
 

  • Preheat oven to 350 °F (≈176 °C). Line baking sheets with parchment paper.
  • Combine the granulated sugar and lemon zest. Rub together with fingers or mixer until fragrant.
  • Add the butter and beat until light and creamy. Then beat in egg and vanilla until combined.
  • In a separate bowl, whisk together flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture and beat until a smooth dough forms.
  • Scoop or roll dough into portions (e.g. 1 tbsp size) and roll into balls. Flatten slightly (e.g. with bottom of a glass) and place on prepared baking sheet.
  • Bake for about 8 minutes, until edges are set (centers may still look soft). Remove from oven and let cool on the pan for a few minutes, then transfer to wire rack to cool completely.
  • To make the filling: beat the cream cheese and softened butter until smooth. Gradually add powdered sugar, then stir in lemon juice and zest to taste until creamy.
  • Pipe or spread filling onto the underside of half the cookies, then top with remaining cookies to form sandwiches.

Notes

You can chill the filling slightly before assembling so it spreads more cleanly. If the cookies spread too much, reduce bake time a little. Store assembled sandwiches in the fridge for a few days.
