  • ¼ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cream of tartar (optional) Helps stabilize egg whites.

For the Whipped Topping

  • ½ cup heavy whipping cream Use coconut cream for dairy-free.
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Preparation

  • Prep your workspace and gather all ingredients and tools. Preheat your oven to 350°F (175°C).
  • Grease your cake pan with oil or butter and line the bottom with parchment paper.
  • In a large mixing bowl, combine yogurt, oil, and vanilla extract. Whisk until smooth. Add egg yolks and sugar, stirring to combine.
  • In a separate bowl, sift flour, baking powder, and salt together. Gradually add to wet ingredients and stir gently until just combined.
  • In a clean bowl, whisk egg whites with cream of tartar until soft peaks form.
  • Gradually add sugar to egg whites, whisking until stiff peaks form.
  • Gently fold whipped egg whites into the batter in two to three additions.
  • Pour the batter into the prepared cake pan and smooth the top.

Baking

  • Bake in the preheated oven for about 25-30 minutes, until golden brown and a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Topping

  • In a chilled mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Once the cake is cooled, top with whipped cream and garnish with fresh berries or powdered sugar.

Notes

Chill your mixing bowl for the whipped topping for better results. Avoid overmixing the batter to maintain fluffiness.
