  • 2 cups mashed potatoes (leftover or freshly made)
  • 1 large egg lightly beaten
  • ½ cup shredded cheddar cheese plus extra for topping
  • ¼ cup crumbled cooked bacon
  • 2 tablespoons chopped green onions plus extra for garnish
  • ¼ cup all-purpose flour or breadcrumbs for binding
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper

For Serving

  • sour cream or ranch dressing for dipping

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly grease a mini muffin tin or line a baking sheet with parchment paper.
  • In a large bowl, combine mashed potatoes, egg, cheddar cheese, bacon, green onions, flour, salt, and pepper. Mix until well blended and holds its shape.
  • Using a small scoop or spoon, portion the mixture into the muffin tin or onto the prepared baking sheet. Sprinkle a bit of extra cheese on top of each bite.
  • Bake for 15–20 minutes, or until golden brown and crispy on the edges.
  • Allow to cool slightly, then remove from the tin. Garnish with extra green onions and serve warm with sour cream or ranch dressing for dipping.

Notes

These bites are ideal for parties and game nights! You can swap cheddar for mozzarella, add jalapeños for spice, or even roll them in breadcrumbs before baking for extra crunch. To make ahead, freeze the unbaked bites and bake straight from frozen.
