Preparation

  • Gather all your ingredients. Ensure the lobster meat is cooked and chopped into small pieces.
  • In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Cooking

  • In a non-stick skillet, melt the butter over medium heat until bubbling but not browned.
  • Pour the egg mixture into the skillet, tilting it to coat the bottom evenly. Cook until the edges begin to set, about 1-2 minutes.
  • Gently lift the edges with a spatula to allow uncooked eggs to flow underneath, cooking evenly.
  • When the omelette is nearly set but still slightly runny on top, evenly sprinkle the lobster meat over one half.
  • Carefully fold the omelette over the lobster and cook for another minute until the center firm but not dry.
