  • 2 cups cooked lobster meat, chopped Ensure the lobster is cooked before chopping.
  • 1 cup heavy cream
  • ½ cup milk
  • ¼ cup butter Melted.
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice Adds brightness to the flavor.

For Assembly

  • 1 tablespoon chopped fresh parsley For garnish.

Preparation

  • Gather all your ingredients and ensure the lobster meat is cooked and chopped.

Cooking the Base

  • In a saucepan over medium heat, melt the butter.
  • Add the flour, salt, and black pepper, stirring together for about one minute.
  • Cook until the mixture bubbles slightly.

Making the Filling

  • Gradually pour in the heavy cream while whisking constantly, followed by the milk.
  • Continue whisking until the mixture thickens (about 3-4 minutes) until it coats the back of a spoon.

Combining Ingredients

  • Remove the saucepan from heat and stir in the chopped lobster meat and lemon juice until well combined.

Assembling the Pie

  • Place the pre-made pie crust in a pie dish and pour the lobster filling into the crust, spreading it evenly.

Baking

  • Preheat the oven to 375°F (190°C).
  • Bake the filled pie for 25-30 minutes, or until the crust is golden brown.

Cooling and Serving

  • Let the Lobster Pie cool for about five minutes before slicing.
  • Garnish with chopped fresh parsley before serving.

Notes

Be sure to not overcook the lobster beforehand, and allow the pie to cool slightly before slicing for a better presentation.
