  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice

Creamy Risotto

  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth Ensure broth is gluten-free if needed.
  • 1 cup heavy cream Can substitute with almond or coconut cream for lighter option.
  • ½ cup Parmesan cheese, grated
  • ½ cup onion, finely chopped
  • 3 tablespoons olive oil

Roasted Asparagus

Preparation

  • Gather all your ingredients. Chop vegetables, measure liquids, and have everything ready.

Cooking

  • Melt unsalted butter in a saucepan over medium heat, stir in minced garlic, and cook until fragrant.
  • Add lemon juice and parsley once off the heat for garlic butter sauce.
  • In a separate pot, heat olive oil, sauté onions until translucent, and add Arborio rice.
  • Gradually add warm broth, stirring consistently until rice absorbs liquid. Finish with cream and Parmesan cheese.
  • Preheat your oven to 400°F (200°C). Toss asparagus with olive oil, salt, and pepper and roast for 15-20 minutes.
  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Drizzle with olive oil and lemon juice and toss gently.
  • Boil peeled and chopped potatoes until fork-tender, drain and mash with garlic, milk, and butter. Season to taste.

Serving

  • Arrange the risotto, roasted asparagus, and mashed potatoes artfully on the plate alongside the lobster. Drizzle garlic butter sauce generously over the lobster and side dishes.
  • Serve immediately while everything is hot.
