Lucky Charms Cookies
Delightfully whimsical cookies that combine the flavors of Lucky Charms cereal with a buttery cookie base, perfect for any occasion.
Ingredients

- 1 cup Unsalted butter, softened
- 1 ¼ cups Granulated sugar
- 1 large Egg, room temperature
- 2 teaspoons Vanilla extract
- 2 ½ cups All-purpose flour
- ½ teaspoon Baking soda
- ½ teaspoon Baking powder
- ¼ teaspoon Salt
- 2 cups Lucky Charms marshmallows, divided 1 cup for mixing into dough, 1 cup for topping cookies
Instructions
Preparation
- Gather and measure all your ingredients.
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
Mixing
- In a stand mixer, cream together the softened butter and granulated sugar on medium-high speed for 2-3 minutes until pale and fluffy.
- Add the large egg and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, and salt.
- Slowly mix the dry ingredients into the wet ingredients on low speed until just combined. Do not overmix.
- Fold in 1 cup of the Lucky Charms marshmallows by hand.
Baking
- Use a size 40 cookie scoop to form 2-tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them 2 inches apart.
- Bake for 9-11 minutes until the edges are barely golden and the tops appear set.
- Press the remaining 1 cup of Lucky Charms marshmallows into the tops of the warm cookies immediately after baking.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
Try adding a pinch of cinnamon or sea salt to the dough for extra flavor. Use seasonal marshmallows for festive occasions!
