Ingredients
  

Macaron Shells

  • 1.5 cups almond flour Use finely ground almond flour for best results.
  • 2 cups powdered sugar
  • 3 large egg whites Aged, if possible for better volume.
  • 0.5 cups granulated sugar
  • 1 tsp raspberry flavoring or puree Use high-quality raspberry flavoring.
  • Food coloring (magenta) For vibrant color.

Ganache Filling

  • 0.5 cups pistachio nuts Chopped for filling.
  • 1 cup heavy cream For making ganache.
  • 2 tbsp butter Use unsalted for ganache.

Preparation

  • Gather all ingredients and ensure egg whites are at room temperature.

Cooking

  • Preheat your oven to 300°F (150°C).
  • In a bowl, combine almond flour and powdered sugar. Sift to remove lumps.
  • Whisk egg whites in a clean mixing bowl until frothy. Gradually add granulated sugar until stiff peaks form (about 5-7 minutes).
  • Gently fold the dry mixture into the whipped egg whites along with raspberry flavoring and food coloring.
  • Line a baking sheet with parchment paper and pipe small circles of batter onto it.
  • Let the piped macarons rest for 30 minutes at room temperature.
  • Bake macarons for 15-20 minutes until they rise and form feet.
  • Prepare the ganache by heating heavy cream until bubbling, then pour it over chopped pistachios and butter. Stir until smooth and let cool slightly.
  • Once halves are cool, use ganache to fill half the shells and sandwich them with the other halves.

Notes

Macarons can be made in advance; store in an airtight container. Substitute almond flour with sunflower seed flour for nut-free options. Freeze for up to 3 months.
