Ingredients
  

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk whole or plant-based alternative
  • 1 large egg
  • 2 tbsp butter melted
  • 1 cup Lucky Charms cereal

Instructions
 

  • In a large bowl, whisk together flour, sugar, baking powder, and salt until evenly mixed.
  • In a separate bowl, whisk the egg, milk, and melted butter until combined.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Avoid overmixing.
  • Fold in the Lucky Charms cereal to distribute evenly throughout the batter.
  • Heat a non-stick griddle or frying pan over medium heat and lightly grease with butter or oil.
  • Pour about 1/4 cup of batter per pancake onto the griddle. Cook until bubbles form and edges look set, about 2–3 minutes.
  • Flip and cook the other side for 2–3 minutes or until golden brown. Repeat with remaining batter.
  • Serve warm topped with maple syrup, whipped cream, and extra Lucky Charms marshmallows for a magical finish!

Notes

For extra fun, tint your batter green for St. Patrick’s Day! These pancakes also freeze well — store in an airtight bag for up to 1 month and reheat before serving.
