Ingredients
  

Pie Base

  • 1 pre-made graham cracker crust 9-inch size

Filling

  • 1 cup heavy cream chilled
  • 1 cup sweetened condensed milk
  • ½ cup mint chocolate chip ice cream softened
  • 1 tsp peppermint extract
  • green food coloring optional

Topping

  • whipped cream for topping
  • chocolate shavings or mint leaves for garnish

Instructions
 

  • In a chilled bowl, whip the heavy cream with a mixer until stiff peaks form. Set aside.
  • In a separate bowl, combine the sweetened condensed milk, softened mint chocolate chip ice cream, peppermint extract, and green food coloring (if using). Mix until smooth and evenly colored.
  • Gently fold the whipped cream into the mint mixture until well combined and fluffy.
  • Pour the mixture into the pre-made graham cracker crust, smoothing the top evenly with a spatula.
  • Freeze the pie for at least 4 hours or until fully set.
  • Before serving, let the pie sit at room temperature for 10–15 minutes. Top with whipped cream and garnish with chocolate shavings or mint leaves.

Notes

This no-bake pie is perfect for St. Patrick’s Day celebrations. For a gluten-free version, use a gluten-free graham crust. Keep frozen and covered for up to one week. For extra flavor, try using Oreo crust or adding crushed peppermint candies.
