Crust

  • 1 cup graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • ¼ cup sugar

Filling

  • 1 can coconut milk (14 ounces)
  • ½ cup sugar
  • 3 large eggs
  • ½ cup key lime juice
  • Zest of 2 key limes
  • 1 cup mango puree
  • 1 tablespoon gelatin (optional, for thicker topping)

  • Fresh mango slices
  • Lime zest

Preparation

  • Gather all the ingredients and preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish.

Make the Crust

  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup sugar. Stir until resembles wet sand. Press evenly into the bottom of the prepared baking dish.
  • Bake for 8-10 minutes or until it turns a light golden brown. Remove from the oven to cool.

Make the Filling

  • In a fresh mixing bowl, whisk together the coconut milk, 1/2 cup sugar, eggs, key lime juice, and lime zest until smooth.

Bake the Filling

  • Pour the filling over the cooled crust and spread evenly. Return to the oven and bake for 20-25 minutes, until set but still jiggles slightly in the center.
  • Cool completely at room temperature for about an hour.

Chill

  • Refrigerate for at least two hours to let the flavors meld and the texture firm up.

Prepare Mango Topping

  • Blend mango until smooth. If using gelatin, dissolve according to package instructions and mix with mango puree.

Finalize

  • Spread the mango topping evenly over the key lime filling and garnish with fresh mango slices and lime zest.
  • Slice into bars and serve chilled.

Notes

Best served chilled and pairs well with vanilla ice cream or tropical fruit salads. Can be made ahead of time and stored in the refrigerator or frozen for longer storage.
