Maple Soy Salmon Strips with Fried Rice

Ingredients
  

For the Salmon

  • 1 pound Salmon fillet, skin removed
  • ¼ cup Maple syrup
  • ¼ cup Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 tablespoon Green onions, chopped (for garnish)

For the Fried Rice

  • 2 cups Cooked rice (preferably day-old)
  • 2 tablespoons Vegetable oil
  • ½ cup Carrots, diced
  • ½ cup Peas (fresh or frozen)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • to taste Salt and pepper
  • 1 tablespoon Green onions, chopped (for garnish)

Instructions
 

Preparation

  • Gather all your ingredients. Cut the salmon fillet into strips and set aside.
  • Measure out the maple syrup, soy sauce, rice vinegar, sesame oil, garlic, ginger, and vegetables.

Marinade

  • In a small bowl, mix maple syrup, soy sauce, rice vinegar, sesame oil, minced garlic, and ginger.
  • Place salmon strips in a shallow dish and pour the marinade over them. Ensure all pieces are coated well. Marinate for at least 15 minutes.

Fried Rice

  • Heat vegetable oil in a large skillet over medium-high heat. Add diced carrots and peas, sauté until tender, about 3-4 minutes.
  • Add the cooked, day-old rice to the skillet, breaking up clumps, and stir-fry until heated through.
  • Push rice and vegetables to the side, pour in the beaten eggs, and allow to cook before scrambling and mixing with the rice.
  • Pour in soy sauce and sesame oil, mix until combined, then season with salt and pepper to taste.
  • Remove fried rice from the skillet and set aside.

Cooking the Salmon

  • In the same skillet, add the marinated salmon strips, cooking for about 4-5 minutes on each side until cooked through and glazed.
  • Optionally, pour some leftover marinade over the salmon while it cooks for added flavor.

Serving

  • Serve salmon strips over fried rice and garnish with chopped green onions.
  • Enjoy your meal warm!

Notes

Great for leftovers; can be stored in the fridge for up to 3 days. Cooked salmon can be reheated in a microwave or skillet.
