Ingredients
  

Cheeses

  • 170 grams sharp cheddar cheese, cut into cubes
  • 85 grams Havarti cheese, cut into cubes

Vegetables and Olives

  • 1 piece bell pepper, sliced (any color)
  • 60 millilitres black olives
  • 60 millilitres pimento-stuffed green olives

Marinade

  • 15 millilitres olive oil
  • 15 millilitres white distilled vinegar
  • 2.5 millilitres dried Italian herbs

Preparation

  • Start by cutting the cheddar and Havarti cheese into neat cubes.
  • Slice the bell pepper into strips.

Combine Ingredients

  • In a large mixing bowl, combine the cheese cubes, sliced bell pepper, black olives, and pimento-stuffed green olives. Gently toss them together to mix the ingredients adequately.

Prepare the Marinade

  • In a small bowl, whisk together the olive oil, white distilled vinegar, and dried Italian herbs.

Marinate

  • Drizzle the freshly prepared marinade over the cheese and vegetable mixture, ensuring even coverage.
  • Gently stir until all ingredients are well coated in the marinade.
  • Cover the bowl and refrigerate for at least two hours.

Serve

  • Once marinated, let it sit at room temperature for about 15 minutes.
  • Transfer the Marinated Cheese and Olives to a serving platter.

Notes

This dish can be made a day in advance for enhanced flavor. Store any leftovers in an airtight container in the refrigerator for up to a week.
