  • 1 small yellow onion, minced
  • 3 cloves garlic, minced
  • 1.5 tablespoons tomato paste
  • 0.5 cup sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon red chili flakes
  • 1 teaspoon salt
  • 0.75 cup vegetable broth
  • 1 cup coconut milk
  • 850 grams canned chickpeas, drained and rinsed
  • 1 handful spinach or basil, torn

Instructions
 

Preparation

  • Gather all your ingredients and prepare them accordingly: mince the onion and garlic, chop the sun-dried tomatoes, and rinse the canned chickpeas.

Cooking the Base

  • Heat olive oil in a large skillet over medium heat. Add minced onion and garlic, stirring frequently until fragrant and the onion is translucent, about 5 minutes.

Incorporating Flavors

  • Stir in sun-dried tomatoes, tomato paste, Italian seasoning, red chili flakes, and salt. Cook for an additional 3 minutes, stirring continuously.

Creating the Sauce

  • Pour in vegetable broth and coconut milk, stirring well to create a cohesive sauce.

Adding Chickpeas

  • Add drained and rinsed chickpeas to the sauce, ensuring each is coated. Cover and cook for 2-3 minutes.

Finishing Touches

  • Stir in torn spinach or basil just before serving.

Serving

  • Taste and adjust seasoning. Serve warm over rice, pasta, or with crusty bread.
