Creamy, garlicky, and packed with tender shrimp and sun-dried tomatoes, this Marry Me Shrimp Pasta is a restaurant-quality dish you can make at home in under 30 minutes. Perfect for date nights, family dinners, or special occasions.
Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 3–4 minutes. Remove shrimp and set aside.
Stir in sun-dried tomatoes and cook for 1 minute to release their flavor.
Pour in heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and creamy.
Return pasta and shrimp to the skillet, tossing to coat everything evenly in the sauce. Add a splash of pasta water if needed to loosen the sauce.
Taste and adjust seasoning with more salt and pepper if needed. Garnish with fresh basil or parsley and serve warm.
Notes
For a lighter option, substitute coconut milk for heavy cream. Add spinach or zucchini for extra vegetables. For a spicier kick, sprinkle in red pepper flakes.
