Ingredients
  

  • 12 oz tortellini fresh or frozen
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 2 cups spinach fresh or frozen
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • salt and pepper to taste
  • red pepper flakes optional

Instructions
 

  • Bring a large pot of salted water to a boil. Cook tortellini according to package instructions (3–5 minutes fresh, longer if frozen). Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  • Pour in heavy cream and bring to a gentle simmer, stirring occasionally.
  • Stir in Parmesan cheese until melted and smooth.
  • Add spinach and cook 2–3 minutes until wilted.
  • Toss cooked tortellini in the sauce until evenly coated.
  • Season with salt, pepper, and red pepper flakes (if using). Serve hot with extra Parmesan if desired.

Notes

For a twist, add mushrooms, roasted squash, or fresh herbs like basil or thyme. Use gluten-free tortellini or dairy-free substitutes if needed.
