  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano Fresh herbs like dill, thyme, or rosemary can be used.
  • Salt to taste
  • Pepper to taste

For the Vegetables

  • 2 cups cherry tomatoes, halved
  • 1 piece bell pepper, sliced
  • 1 piece zucchini, sliced Can be substituted with asparagus or eggplant.
  • Fresh parsley or basil for garnish

Preparation

  • Begin by gathering all your ingredients and preheating your oven to 400°F (200°C).
  • In a large baking dish, lay out your fish fillets, evenly spaced.
  • Scatter your cherry tomatoes, sliced bell pepper, and zucchini around the fish.
  • Drizzle the olive oil over the fish and vegetables, then sprinkle minced garlic, dried oregano, salt, and pepper.
  • Place lemon slices on top of the fish and vegetables.

Baking

  • Slide the baking dish into your preheated oven and bake for 20-25 minutes, or until the fish flakes easily with a fork.
  • Check for doneness by gently using a fork, cooking a bit longer if necessary.

Serving

  • Once the fish is cooked, remove it from the oven and garnish with fresh parsley or basil.
  • Serve warm, ensuring each plate gets fish, vegetables, and zesty lemon.

Notes

To save time, chop vegetables ahead of time. Leftovers can be stored in an airtight container for up to 3 days.
