Ingredients
  

Mediterranean Chicken Zucchini

  • 2 chicken breasts cubed
  • 2 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 0.5 cup black olives sliced
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • salt and pepper to taste
  • feta cheese crumbled, for serving

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken with salt, pepper, and oregano, then add to skillet.
  • Cook chicken until lightly browned and cooked through. Remove and set aside.
  • In the same skillet, add garlic and zucchini. Sauté until tender.
  • Add cherry tomatoes and olives, cooking for 2–3 minutes.
  • Return chicken to the skillet and toss to combine.
  • Serve warm topped with crumbled feta cheese.

Notes

Serve with rice, quinoa, or crusty bread. You can also add fresh basil or lemon juice for extra brightness.
