Ingredients
  

Main Ingredients

  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • ½ red onion thinly sliced
  • 2 cloves garlic, minced

Seasonings and Oils

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional) for heat

Cheese and Garnish

  • ½ cup shredded mozzarella cheese or feta for a Mediterranean touch
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish with olive oil.
  • In a large bowl, combine the bite-sized pieces of chicken with the sliced zucchini, halved cherry tomatoes, sliced red onion, and minced garlic.
  • Drizzle the mixture with olive oil and sprinkle the oregano, basil, smoked paprika, salt, pepper, and red pepper flakes (if using) over the top. Toss everything well to ensure all the ingredients are evenly coated with the spices.
  • Pour the seasoned chicken and vegetable mixture into the prepared baking dish. Use a spatula to spread everything evenly for consistent cooking.

Baking

  • Sprinkle the shredded mozzarella and grated Parmesan cheese on top of the chicken and vegetables.
  • Cover the baking dish with aluminum foil and place it in the oven. Bake for 20 minutes.
  • After 20 minutes, remove the foil and continue baking for another 10–15 minutes. Check that the cheese has melted and turned golden; also ensure the chicken reaches an internal temperature of 165°F (75°C).
  • Once baked, take the dish out of the oven and let it cool for a couple of minutes. Garnish with freshly chopped parsley before serving.

Serve

  • This dish is best enjoyed warm. Serve it in deep bowls for a comforting, hearty meal.
