Mediterranean Quesadillas

A flavorful twist on quesadillas with Mediterranean-style fillings like spinach, feta, mozzarella, red onion and tomatoes.

Ingredients
  

Filling

  • 2 cups fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 large tomato, diced
  • ¼ cup red onion, thinly sliced
  • 4 large flour tortillas
  • olive oil or butter for cooking
  • salt & pepper, to taste

Instructions
 

  • Pre-heat a frying pan or griddle over medium heat and lightly grease with olive oil or butter.
  • In a bowl combine the chopped spinach, diced tomato, sliced red onion, crumbled feta and shredded mozzarella. Season with salt and pepper if needed.
  • Lay one tortilla flat, spread about a quarter of the filling over one half of the tortilla, then fold the other half over to enclose it.
  • Place the folded tortilla into the hot pan. Cook about 3-4 minutes on the first side until golden brown, then flip and cook another 2-3 minutes until the cheese is melted and the tortilla is crisp.
  • Repeat with the remaining tortillas and filling. Slice each quesadilla into wedges and serve immediately, optionally with a side of salsa, yoghurt or tzatziki.

Notes

Feel free to add extras like Kalamata olives, roasted red pepper slices or a drizzle of hummus inside for extra Mediterranean flavour.
