  • 1 cup rice (preferably long-grain)
  • 1 can black beans, drained and rinsed
  • 1 cup vegetable broth or water Use gluten-free broth if needed
  • 1 piece bell pepper, diced (red, yellow, or green)
  • 1 piece onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper

Preparation

  • Gather all the ingredients. Rinse and drain the black beans, and chop the onion and bell pepper into bite-sized pieces.

Cooking

  • In a large pan, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until soft for about 5-7 minutes.
  • Stir in the minced garlic and cumin, cooking for another minute until garlic is fragrant.
  • Add the rice to the pan, stirring to coat it with the oil and vegetables.
  • Pour in the vegetable broth or water and add the drained black beans, mixing gently.
  • Bring the mixture to a boil, then reduce heat to low and cover the pan. Let it simmer for about 20 minutes.
  • After 20 minutes, check if the rice is cooked and the liquid has been absorbed. Fluff gently with a fork and season with salt and pepper to taste.
  • Transfer to a serving dish and garnish with fresh parsley before serving.

Notes

For added depth, consider toasting the rice in oil before adding the liquid. A splash of lemon juice before serving enhances flavor.
