  • 4 pieces boneless skinless chicken breasts
  • 2 teaspoons oregano
  • 1 teaspoon garlic powder
  • to taste Sea salt and pepper
  • 1 cup fresh blackberries, very slightly smashed with a fork
  • 4 pieces small jalapeño peppers, sliced, most seeds removed
  • 4 slices thick mozzarella or provolone cheese
  • 2 tablespoons avocado oil
  • ½ cup dry white wine or chicken bone broth
  • handful fresh parsley or basil, chopped

Preparation

  • Gather all your ingredients and preheat your oven to 375°F.
  • Season the chicken breasts with oregano, garlic powder, sea salt, and black pepper.
  • Slice each chicken breast lengthwise to create a pocket.
  • Stuff each chicken pocket with a slice of cheese, jalapeño slices, and the smashed blackberries.
  • Heat a large oven-safe skillet over medium heat and add the avocado oil.
  • Sear the stuffed chicken breasts for about 4 minutes on each side, or until browned.
  • Pour in the dry white wine or chicken bone broth to deglaze the skillet.
  • Transfer the skillet to the preheated oven and bake for 12-15 minutes until the chicken reaches an internal temperature of 165°F.
  • Let the chicken rest for a few minutes and garnish with freshly chopped parsley or basil.

Notes

This dish is versatile and can be served at summer BBQs or cozy winter dinners. Pair it with salad, quinoa, or roasted vegetables for a complete meal.
